
Elijah Gallimore-Repole is a second-year Molecular Biology PhD candidate in the Avalos Lab at Princeton University. Hailing from Kingston, Jamaica, Elijah has always been passionate about using science to support initiatives that bolster sustainable development. This passion motivated him to complete his undergraduate education at Cornell University, double majoring in Biological Sciences and Chemistry & Chemical Biology. His undergraduate research experience studying plant molecular biology with the Jander Lab further fueled his desire to pursue his PhD at Princeton University.
Elijah’s PhD research in the Avalos Lab focuses on exploring the sustainable bioprocessing potential of non-conventional microbes. More specifically, he is interested in engineering non-conventional yeasts for bioprocessing that utilizes abundant waste materials for creating useful products and replaces petrochemical-based processes. This research aligns with his entrepreneurial career aspirations centered on innovating biotechnologies for advancing sustainable development worldwide, particularly in developing economies like Jamaica.
In line with his research focus and career aspirations, Elijah is a member of the 'Mycsology Foods' team that participated in the Spring 2024 Northeast Regional NSF I-Corps program. Mycsology Foods uses microbes to ferment plant materials into minimally processed, nutrient-dense, and low-carbon footprint ingredients that can be used in a variety of food products. Through these ingredients, Mycsology Foods aims to address increasing consumer demand for healthier food products with simpler, allergen-free formulations, enhanced micronutrient contents (vitamins and minerals), and increased protein content and bioavailability.
Outside of his research and entrepreneurship, Elijah's main interests include cooking and enjoying different cuisines, traveling, and all things football (soccer) whether watching, discussing, coaching, or playing.
